Yogurt and Pesto Salmon
Spice up simple baked salmon fillets with a garlicky pesto yogurt marinade.

Ingredients
- 1 1/2 lb salmon fillets or steaks
- Marinade
- 1 cup plain yogurt
- 2 tbsp Sicilian Alfredo pesto
- 2 tbsp lemon juice
- 3 French shallots chopped
- 1 clove of garlic crushed
- Salt and pepper

Instructions
- In a bowl, combine all the marinade ingredients. Set aside.
- Place the salmon fillets or steaks in an oven-ready dish. Add the marinade. Mix well. If time permits, cover with plastic wrap and refrigerate for a few hours (optional).
- Cover with aluminum foil and bake at 190 °C (375 °F) for about 20 to 25 minutes.
- Remove from the oven and serve with a salad and stewed vegetables.
