- 1/2 cup extra virgin olive oil
- 2 tbsp red wine vinegar or lemon juice
- 1 tsp Dijon or whole-grain mustard
- 1/2 tsp honey or pinch of sugar
- Freshly ground black pepper

Instructions
- Put all the ingredients in a screw-top jar, put on the lid and shake. This will keep well in the refrigerator to be used when required.
- Add crushed garlic, finely chopped ginger or chopped fresh herbs, if you like. Shake well before using.
