Turkey-Feta Mini Loaves

Ingredients
- 1/3 cup crumbled light feta cheese
- 2 egg whites (rather than discard yolks, use them to bake a cake)
- 1 tsp olive oil
- 1/2 cup quick-cooking rolled oats
- 1 tsp honey
- 1 tsp dried oregano
- 1 jar roasted red peppers (370 mL) drained and rinsed
- 2 green onions finely chopped
- 500 g lean ground turkey
- 2 cloves garlic thinly sliced
- 500 g spinach leaves washed
- 1 tsp red wine vinegar

Instructions
- Preheat oven to 400ºF.
- In a bowl, stir egg whites with a splash of water and the oregano. Stir in oats, feta and green onions. Mix in turkey. With wet hands, divide into 8 portions; press into 8 greased cups in a muffin pan, flattening tops.
- In a food processor, blend red peppers with vinegar and honey; spread a little on each 'loaf.'
- Bake until instant-read thermometer inserted into centres is at 160ºF, about 15 minutes.
- Meanwhile, in a skillet, heat oil over medium-high; sauté garlic until light golden, about 10 seconds. Stir in spinach until wilted, 2 to 3 minutes. Divide among 4 plates, and top each with 2 loaves and remaining red-pepper sauce.
