This Turkey Burger with Pumpkin Seed Pesto Will Help You Sleep Better at Night

Ingredients
- Turkey Burgers
- 1 lb ground turkey
- 1 medium carrot shredded
- 1/3 cup sun-dried tomatoes finely chopped
- 2 oz soft goat cheese crumbled
- 1 garlic clove minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 4 whole-wheat buns halved
- 4 thick slices of tomato
- Pumpkin Seed Pesto
- 3 cups arugula
- 1/4 cup unsalted roasted pumpkin seeds
- 1/4 cup Parmesan cheese grated
- 1 garlic clove minced
- 1/2 lemon juiced
- 1/4 tsp salt
- 3 tbsp extra virgin olive oil

Instructions
Turkey Burgers
- Build a medium-hot fire in a charcoal grill or heat a gas grill to medium-high. Grease grill grates.
- In a large bowl, gently mix together turkey, carrot, sun-dried tomatoes, goat cheese, garlic, salt and pepper. Form burger mixture into 4 patties. Place burgers on grill; cook for 5 to 6 minutes per side or until an internal temperature of 165°F is reached. Remove burgers from grill. Place bun halves on grill and heat until toasted, about 20 seconds.
Pumpkin Seed Pesto
- In a food processor, blend together arugula, pumpkin seeds, Parmesan cheese, garlic, lemon juice and salt. With the machine running, drizzle oil through top tube.
- Serve burgers on buns topped with pesto and tomato slices.
