Thai Vibe
This Thai-inspired noodle salad contains kelp noodles which are easily available at your local health stores. Kelp is a seaweed that’s high in minerals and vitamins, and balances the body’s pH levels, amongst other benefits. Superfood Maca will give you fuel for the day. This sauce can be used on pasta or rice, too

Ingredients
- Mixed Vegetables
- ½ package enoki mushrooms (picked apart)
- 1 bunch dandelion greens (chiffonade)
- 1 red pepper (julienne)
- 1 red onion (julienne)
- 1 bunch cilantro (lightly chopped)
- 1 bag kelp noodles
- Sauce
- 1 cup almond butter
- 2 tbsp ginger chopped
- 5 cloves garlic
- ½ red onion
- 1½ red peppers
- 2 small carrots
- 1½ Thai chillies or (jalapenos)
- ¼ cup rice vinegar
- ½ cup lime juice
- 2 tbsp agave nectar
- 1 tbsp Maca
- Celtic sea salt to taste

Instructions
- Blend all ingredients for the sauce together until smooth.
- In a bowl add garnish of mixed vegetables, with 1 bag of kelp noodles. Add sauce and serve. Top with sunflower sprouts or almonds.
