Sunday Brunch Crêpes
Topped with either sweet or savoury ingredients, this simple crêpe recipe is always a hit.
Instructions
- Mix 1 cup of flour, 2 teaspoons of sugar and a pinch of salt into a small bowl.
- Separately, blend 1 cup of milk, 1/2 a cup of water, 2 teaspoons of melted butter and 2 eggs. Combine the wet and dry ingredients, and blend until smooth. Let your batter sit covered for an hour or so.
- Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter into the pan and quickly tilt in all directions until the pan is covered in a thin film. Cook for roughly 1 minute or until you can lift the edges with a spatula (this takes a little practice)
- Using a spatula, flip crêpes and cook another 30 seconds or until the centre is set. Place crêpe on a towel, and allow to cool completely. Repeat.
- Serve them rolled and topped with berries, whipped cream, chocolate, nuts — the choices are endless. For savoury crêpes, add grated cheddar or crumbled feta, sauteed spinach, or ham.
