Round-Steak Chili
This recipe is easy: Throw everything into a pot, turn on a burner, and relax.

Ingredients
- 1 lb beef round steak trimmed and cut into 1/2-in. cubes
- 1 large onion chopped
- 2 garlic cloves minced
- 53/4 cups vegetable juice (such as V8)
- 1 can crushed tomatoes
- 2 cups celery sliced
- 1 medium green pepper chopped
- 1 bay leaf
- 2 tbsp chili powder
- 1 tsp brown sugar
- 1 tsp dried oregano
- 1/2 tsp celery seed
- 1/2 tsp paprika
- 1/2 tsp mustard powder
- 1/2 tsp ground cumin
- pinch cayenne pepper
- pinch dried basil
- 16 oz kidney beans rinsed and drained

Instructions
- In a large saucepan coated with cooking spray, brown meat, onion and garlic.
- Add all ingredients except kidney beans. Bring to a boil. Reduce heat and simmer, uncovered, for three hours.
- Add kidney beans and heat through. Remove bay leaf before serving.
