- 2 kg carrots peeled and cut in half lengthwise
- 2 tbsp vegetable oil
- 2 tsp fresh thyme
- 2 tbsp honey
- 2 tsp salt

Instructions
- On a parchment-lined baking sheet, combine carrots, oil, salt, thyme and honey.
- Roast carrots in a preheated 400°F (200°C) for 30 to 40 minutes, or until caramelized and tender.
