Rice and Cilantro Salad
Perfect as a side, a taco filling or just on its own, this cilantro salad is a great dish for summer

- 2 cups cooked brown rice
- 1 tbsp extra virgin olive oil
- 1 tbsp lime juice
- 1 tsp ground cumin
- 1 tsp chili powder
- Small handful cilantro leaves sliced (keep some for garnish)

Instructions
- Mix all ingredients in a bowl and season to taste with salt and pepper. Divide among four plates. Garnish with reserved cilantro leaves.
