Rhubarb Lassi
A lassi is a yogurt-based drink from India that is served either salty or sweet. Mango is a standard sweet-lassi ingredient, but we’ve come up with a version that takes advantage of all the seasonal rhubarb.

- 4 rhubarb stalks chopped
- 2 tbsp orange juice
- 1/2 tsp honey
- 3/4 cup plain low-fat yogurt
- 6 ice cubes
- Splash cold water

Instructions
- Microwave rhubarb (covered) until soft. Chill. Blend with remaining ingredients until smooth.
