Red Cabbage and Apple Salad

Ingredients
- 1 tbsp olive oil
- 2 slices bacon rind removed, chopped
- 1 small onion finely chopped
- 1/4 red cabbage about 300g (10 oz), shredded
- 2 green apples peeled, cored and thinly sliced
- 1 tbsp red wine vinegar
- 1 tbsp soft brown sugar
- Salt and freshly ground black pepper

Instructions
- Heat the oil in a large saucepan over medium heat. Cook the bacon for 5 minutes, until lightly browned. Add the onion and sauté for 5 minutes, until the onion is soft.
- Add the cabbage, apples and 1/4 cup (60 ml) water to the pan and cook, stirring occasionally, for 15 minutes, until the cabbage is soft.
- Stir in the vinegar and sugar. Season with salt and pepper, and serve warm.
Recipe Notes
Variation: This salad also works with green cabbage, or a mixture of red and green cabbage. For a different flavour, add 1 teaspoon caraway seeds with the onion
