Kwanzaa Vegetables
This African vegetable dish is a great addition to any holiday feast. Sweet potatoes, a staple of African cuisine, are also loaded with health-boosting vitamin A.

Ingredients
- 2 tbsp extra virgin olive oil
- 1 clove garlic diced
- 1/2 cup onion diced
- 1 tomato diced
- 3 cups sweet potatoes peeled and diced
- 1/2 cup raisins
- 2 pinches ground cinnamon
- 1 pinch chili flakes
- 1/2 cup vegetable stock
- 1/2 cup canned chickpeas drained and rinsed
- 2 tbsp lemon juice
- Salt and pepper to taste

Instructions
- In a medium sauté pan over medium heat, add olive oil, garlic and onions, and sauté until onions are translucent. Add tomatoes, sweet potatoes, raisins, cinnamon, chili flakes and vegetable stock. Cover, reduce heat to low and cook until potatoes soften, about 15 minutes.
- Add chickpeas and lemon juice, and stir to combine. Season to taste.
