Farfalle with Peas and Mint
The mint in this light pasta dish puts a spotlight on fresh spring peas.

Ingredients
- 3 cups uncooked farfalle (bowtie) pasta
- 1 tbsp extra virgin olive oil
- Juice and zest of 1 lemon
- 1 cup frozen or fresh peas
- 1 tsp chili flakes
- 1/4 cup Parmesan cheese freshly grated
- handful mint leaves finely sliced

Instructions
- In a large saucepan, cook pasta according to package directions. Drain, and to the same pot, add olive oil, lemon juice, zest, peas and chili flakes. On medium heat, toss everything together until hot. Add cheese and mint leaves. Mix lightly and season to taste.
