Easy Mediterranean Salsa
Chopped bacon adds surprising depth to this fresh and easy Mediterranean salsa.

- 1 tbsp olive oil
- 1/4 cup bacon chopped
- 1/2 cup onions chopped
- 1 cup canned tomatoes pureed
- 1/4 cup pitted black olives chopped
- 1 tbsp parsley chopped
- Salt and freshly ground pepper to taste

Instructions
- Heat oil in a skillet over medium heat. Add bacon and onions and sauté until bacon is slightly crisped, about 4 minutes. Add tomatoes and bring to a boil.
- Turn heat back to medium and simmer for 5 minutes or until slightly thickened.
- Stir in olives and parsley. Season Mediterranean salsa with salt and pepper.
- Serve with Mustard Crumb Crust Fried Chicken and Corn and Pepper Fritters.
