Chicken Pasta Salad
Instead of sandwiches, Abbey Chan (daughter of registered dietitian Sue Mah) loves taking pasta to school for lunch. This recipe took 3rd prize in a recipe contest for kids.

Ingredients
- 3 1/2 cups Cooked short whole wheat pasta
- 1 1/2 cups cooked chicken Diced
- 1 large carrot coarsely grated
- 1 cup cucumber Diced
- 1/4 cup Low fat Caesar salad dressing

Instructions
- In a large bowl, combine pasta, chicken, carrot and cucumber.
- Drizzle with dressing and stir to combine well.
- Cover and refrigerate for up to 2 days.
