Bunless “Kiwi Burger”
The so-called Kiwi burger is popular in New Zealand. It’s a beef burger topped with cheese, beets, pineapple, onion, tomato, lettuce and a fried egg. This healthier version is bunless, uses chicken, and skips the fried egg.

Ingredients
- 1/2 cup orange juice
- Juice of 3 limes
- Juice of 1 lemon
- 2 tbsp chipotle chili powder
- 2 tsp cumin powder
- 1 clove garlic finely minced
- Salt and pepper Pinch each
- 2 boneless skinless chicken breasts (each about 250 g/8 oz.)
- 2 tbsp olive oil
- 4 red onion rings
- 4 slices pineapple each 1/4 in. thick
- 4 slices tomato 1/4 in. thick
- 4 thin slices low-fat cheddar
- 8 slices beet (canned)
- 1 cup radish sprouts (or substitute pea or alfalfa sprouts)

Instructions
- To make marinade: In a medium bowl, whisk together orange, lime and lemon juices; chipotle chili powder; cumin; garlic; salt and pepper. Place chicken breasts in marinade and refrigerate for at least an hour.
- Preheat grill to medium. Brush grill with olive oil and cook chicken for eight minutes on first side (discard marinade). Turn over and cook another five minutes until cooked through.
- While chicken is cooking, grill onion and pineapple on oiled grill for four minutes each side.
- To assemble, slice chicken breasts in half horizontally and put one breast half on each of four plates. Top each with a slice of tomato, pineapple, onion and cheddar, two beet slices and some sprouts.
