Ingredients
- 2 large hard boiled eggs
- 3/4 cup canned pinto or black beans drained and rinsed
- 1/2 avocado cubed
- 1 plum (Roma) tomato diced
- 1/2 red bell pepper chopped
- 1/2 tsp paprika
- 1/4 tsp sea salt
- 2 corn or whole-wheat 8-in. soft tortillas warmed in microwave
- 2 tbsp low-fat sour cream
- 2 tbsp cilantro or flat-leaf parsley chopped

Instructions
- Peel eggs, place in a large bowl and roughly mash with a fork. Stir in beans, avocado, tomato, red pepper, paprika and salt.
- Divide mixture between tortillas, top with sour cream and cilantro or parsley, then roll up.
