Bouillon Vegetable Soup
Make plenty of this hunger-stopper ahead of time so you have it on hand during Power Burn Days. It’s so satisfying that you’ll have a hard time believing it contains only 80 calories per serving.

Ingredients
- 1/4 cup onion chopped
- 1/4 cup celery chopped
- 1/4 cup carrot grated
- 1/4 cup tomatoes chopped
- 1 tbsp garlic powder
- 1 tsp onion powder
- 1 tsp ground black pepper
- 1 beef bouillon cube
- 1 cup hot water

Instructions
- In a Dutch oven sprayed with non-stick cooking spray over medium heat, cook onions, celery and carrots for five minutes, or until tender.
- Add tomatoes, garlic powder, onion powder and pepper, and cook for two minutes longer.
- In a small bowl or cup, add bouillon cube to water. When dissolved, add it to vegetables. Allow soup to simmer over medium heat for 10 minutes. Serve warm.
