Baked Cinnamon-Honey Plantain
Native to Southeast Asia, plantains resemble large bananas but are hard, starchy and bland, and need to be cooked before eating. Plantains also have more vitamins A and C, and more potassium (which lowers blood pressure), than bananas.

- 2 yellow-black plantains
- 2 tbsp butter melted
- 1 tbsp honey
- 1/2 tsp cinnamon

Instructions
- Preheat oven to 400 degrees F.
- Peel plantains and cut them into 1/2-in.-thick diagonal slices. Place slices in a medium bowl and toss with butter, honey and cinnamon.
- Arrange slices in a single layer in a baking pan, and cook for 15 minutes or until browned and bubbling. Serve as a dessert or on top of French toast.
