Avocado and Shrimp Appetizer Parfait

Super-simple to make and Instagram worthy, this parfait comes together quickly thanks to frozen avocado and shrimp. Don’t have parfait bowls? No problem! Use a tea cup or regular glass bowl.

Ingredients
- 250 mL PC Frozen Avocado Chunks thawed
- 60 mL hot salsa
- 15 mL fresh parsley chopped
- 15 mL fresh lime juice
- 250 mL PC Frozen Cooked Peeled Wild Atlantic Cold Water Shrimp thawed, rinsed and drained
- 5 mL extra virgin olive oil
- 12 cherry tomatoes cut into quarters (about â…” cup/150 mL)
- 10 mL shallots finely diced
- Pinch salt
- Parsley leaves for garnish

Instructions
- Stir together the avocado, salsa, parsley and 1 tsp (5 mL) of the lime juice in a bowl. In another bowl, stir together shrimp, olive oil and 1 tsp (5 mL) of the remaining lime juice. In a third bowl, stir together tomatoes, shallots, remaining lime juice and the salt.
- Divide avocado mixture among 4 glasses or small bowls; top each with some of the shrimp mixture. Spoon tomato mixture on top.
- Garnish with parsley leaves before serving.
