Versatile sauce for pasta
Sauté some chopped onion and garlic with sliced cremini, oyster and portobello mushrooms. Cover and simmer over low heat for about 15 minutes. Toss in chopped parsley.
Simple veggie burger
Grill or broil a large portobello. Place on whole-grain bun and top with your favourite fixings.
Tasty side dish
Brown sliced shiitake mushrooms in olive oil, then add chopped garlic and tomato. Cook until mixture thickens, about three minutes. Serve this sauce on top of steamed green beans.
For brunch
Sauté your favourite ‘shrooms and add to quiches, frittatas, scrambled eggs or omelettes.
Hearty main-dish salad idea
In a baking dish, combine a few types of mushrooms with minced garlic and a drizzle of olive oil; roast until browned. Place warm mushrooms overtop salad greens, and sprinkle with Parmesan shavings and pine nuts. Drizzle with a red wine vinegar/ olive oil dressing.
Quick supper
Minced ginger, shrimp, mushrooms and red peppers combine for a great stir-fry. Just before serving, stir in a bunch of fresh spinach leaves. Serve overtop brown rice and add a little low-sodium soy sauce.
Feel like a comforting soup?
Sauté chopped onion, garlic, celery, green pepper, carrot and button or cremini mushrooms until soft. Add enough broth to generously cover, and toss in a handful of pearl barley. Bring to a boil, reduce heat and then simmer, partly covered, until barley is cooked, about ?40 minutes.
Easy appetizer
Combine some chopped parsley and tomato with crumbled feta cheese, bread crumbs and a little olive oil. Stuff mixture into stemmed large button, cremini or portobello mushrooms, and place in casserole dish. Bake until softened and nicely browned, about 15 minutes.
