How do you store your fruits and veggies? If it’s in the dark, you might want to turn on the light.
According to a new study published in Current Biology, fruits and veggies still respond to their environment up to a week after being harvested.
What does that mean for their health benefits?
‘We found we could use light to coax them to make more cancer-fighting antioxidants at certain times of day,‘ lead researcher Janet Braam said in a press release.
Meanwhile, storing fruits and veggies in the dark could disrupt their daily rhythms.
The researchers concluded that using natural light to promote natural daily rhythms may be a simple way "to promote pest resistance and nutritional value of plant-derived food."
