Meatless Monday: Vegetarian Tostadas with Black Beans

I’m vegan, but my fiance is vegetarian, so we often make meals that can be tailored to both of us. These tostadas are a great example of a vegetarian meal that is easily made vegan (and is still delicious without the cheese).
Ingredients
4 tostadas or tortillas
1 can black beans, or dry beans soaked overnight
1/2 cup button mushrooms, chopped
Cherry tomatoes
1 avocado
Lime juice
1 yellow onion, chopped
Garlic
Mixed greens with olive oil and balsamic
2 sweet potatoes
Shredded cheese (optional)
Directions
Preheat oven to 350 degrees F. Chop sweet potatoes and drizzle with olive oil, salt and pepper. Cook for 30 to 40 minutes.
Meanwhile, heat olive oil on medium heat, saute 1/2 chopped onion with mushrooms until cooked. Add black beans and heat. Add favourite spices, salt and pepper. Keep on low heat.
Make guacamole: Mash avocado with lime juice. Add salt and minced garlic clove.
Assemble tostadas, serve with a side of sweet potatoes, guacamole, and a simple green salad. Top with tomatoes, and cheese (if desired).
