This meal is genius on a weekday if you are looking to save time and eat healthy. Serve it with a side salad if you want (and if you have a few extra minutes). Either way, it’s super simple. Here’s how I made it:
Chop 1 medium onion and mince 1 clove of garlic. While they heat on medium in a skillet with a little olive oil, chop up 1 red pepper, 1 medium zucchini and around a dozen button mushrooms. Add these to the skillet, then add 1 cup of quinoa (I used organic red & white mixed quinoa). Add 2 cups of water or low-sodium vegetable broth, add dried herbs if desired (I added herbes de Provence), stir, turn heat up to medium high and cover skillet. Test quinoa for doneness after about 10 minutes, and add a little more liquid if necessary. Sprinkle with crumbled feta cheese and enjoy hot.
