It’s inevitable. In February, I spend the cold, grey days daydreaming of summer. Last August, my then-boyfriend (now fiance) and I went to Algonquin Park for camping and canoeing. We spent one night "glamping" and had this magical evening in the forest, where we made our own pizzas and cooked them in a wood-fire oven. We rolled out the dough, loaded it with fresh tomato sauce and added all our fave veggies. It was simple, but delicious. Now, when I make the same pizza on a cold February evening, it brings me back to that summer – and gets me excited for the next one. The only difference? This August, we’ll be saying our vows in a forest instead of making pizza.
Ingredients
Fresh pizza dough
Tomato sauce
Can of marinara sauce
1 tbsp oregano
2 tbsp basil
2 cloves garlic
1 yellow onion
Directions
Preheat oven to 450 F. Roll pizza dough out on pizza stone.
In a pot, sautee onion and garlic in olive oil. Add can of marinara sauce, basil and oregano. Stir and let simmer on low for 10 minutes. Add salt and pepper to taste.
Spread the sauce on the dough and then add your favourite toppings.
We used:
Fresh zucchini
Mushrooms
Red onion
Daiya (vegan) cheese
Veggie "pepperoni"
Lots of fresh basil
Bake for 10 to 12 minutes, or until dough is cooked.
