Meatless Monday: Coronation Chick Peas
I know, I know, it doesn’t necessarily LOOK that appetizing, but this served-hot, vegetarian take on Coronation Chicken tastes excellent.
I know, I know, it doesn’t necessarily LOOK that appetizing, but this served-hot, vegetarian take on Coronation Chicken tastes excellent. And hey, we’re gearing up for a royal wedding, so it’s somewhat fitting. Here’s how I made it:
In a pot I combined about two cups of cooked quinoa with one can of drained & rinsed chickpeas. I added a few tablespoons of jarred curry sauce I had in the fridge (the kind you make butter chicken with… or that my husband made it with, anyway), then I diced a red pepper and added that, too. I poured in some crushed chili sauce’oops, too much! So to counter the heat, I chopped a large peeled apple and stirred that in, then added about one cup of chopped green beans. I added a few splashes of water and simmered this stew, covered, for about 10 minutes, stirring a few times. Then I added coriander near the end, and since it was still pretty spicy, served it with a dollop of yogurt. It’s a filling and tasty’not to mention fast and healthy’dinner. Fit for a princess, in fact.
