Beyond pie: Healthy pumpkin recipes
Like most North Americans, I have a strong association of pumpkin as a comfort food, mostly in its pie form
Like most North Americans, I have a strong association of pumpkin as a comfort food, mostly in its pie form (like this "silky smooth pumpkin pie from Smitten Kitchen) but also in savoury dishes. A couple of my favourite food bloggers have recently posted pumpkin recipes I’m dying to try: from Veggie Meal Plans, a Pumpkin Chickpea Salad with Miso Tahini Orange Dressing; and from Lisa’s Vegetarian Kitchen, Pumpkin Scones that are apparently amazing. I also like pumpkin just chopped and roasted with some olive oil and salt, or blended into a soup, and when I’m using a real pumpkin, I roast the seeds as well. Here are some more pumpkin recipes:
