Ingredients
- 500 g extra-lean ground turkey
- 2 tbsp extra virgin olive oil
- 1/4 cup red pepper finely diced
- 1/4 cup diced red onion
- 1/4 cup kalamata olives pitted and finely diced
- 2 tsp fresh parsleu finely diced
- 2 tsp basil finely diced
- 1 egg white
- 1/4 cup bread crumbs
- 1/4 cup feta cheese
- black pepper to taste

Instructions
- Preheat oven to 375°F.
- In a medium-sized sauté pan over medium heat, add olive oil, red peppers, red onion and kalamata olives, and sauté until onions have softened.
- Place mixture in a medium-sized bowl and add ground turkey, parsley, basil, egg white, bread crumbs, feta cheese and a pinch of pepper. Fold together to combine ingredients.
- Transfer to a 4×8-in rectangular baking dish and press down to fill dish evenly.
- Bake for 40 minutes
